Am nächsten Morgen kommt Hefe, Mehl, Gewürze und alle weitere Zutaten dazu. Das Ganze wird 12 Minuten von einem 50 Jahre alten Rührmaschinchen – Hartmanns ganzer Stolz – durchgeknetet, dann in die Kastenformen gepackt – und dann steht der Teig noch mal eine Stunde, um aufzugehen.
Währenddessen wird schon am nächsten Teig gearbeitet. „Zeit ist der wichtigste Faktor beim Brotbacken, Industriebrot geht mir so auf den Zeiger, mit den Zusatzstoffen, den Treibmitteln!“ Dann geht die erste Produktion ab in den auf 300 Grad vorgeheizten Backofen – Hartmanns zweiter ganzer Stolz – und bleibt eine Stunde drin.
Die Gäste des Sissi wissen die Qualität des Brotes zu schätzen, und manche nehmen sich auch ein Laib Brot mit nach Hause. „Es ist bei uns nicht mehr der erste Sattmacher vor dem eigentlichen Essen.“
